Description

Delicious and nutritious peanut butter powerballs that make for a perfect snack or energy boost.


Ingredients

  • 1 1/2 cups old-fashioned rolled oats
  • 1/2 cup natural peanut butter
  • 1/3 cup honey
  • 1/3 cup mini chocolate chips
  • 1/4 cup ground flaxseed
  • 1 tbsp chia seeds
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions

  1. In a large mixing bowl, combine the rolled oats, ground flaxseed, chia seeds, and salt.
  2. Add the peanut butter, honey, and vanilla extract to the dry ingredients. Stir until the mixture is well combined and sticky.
  3. Fold in the mini chocolate chips until evenly distributed.
  4. Use your hands or a cookie scoop to shape the mixture into 1-inch balls.
  5. Place the powerballs on a lined baking sheet or plate. Chill in the refrigerator for at least 30 minutes before serving.
