Delicious lemon muffins that are perfect for any occasion.

- ½ cup unsalted butter, melted
- 1 cup granulated sugar
- ½ cup all-purpose flour
- 4 large eggs
- 2 cups whole milk
- ½ cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- ⅛ teaspoon salt
Instructions
- Preheat oven to 350°F (175°C) and grease a standard muffin tin or use silicone liners.
- In a large bowl, whisk together melted butter, sugar, eggs, milk, lemon juice, zest, and vanilla until smooth.
- Sift in flour and salt. Stir just until combined — do not overmix.
- Pour batter evenly into muffin cups, filling each about ¾ full.
- Bake for 22–25 minutes until tops are golden and a toothpick inserted comes out clean.
- Cool in the tin for 10 minutes before removing.
- Once cooled, dust with powdered sugar and enjoy!

- These muffins are best served fresh.
- Store in an airtight container at room temperature for up to 2 days.
