Description

Delicious lemon muffins that are perfect for any occasion.


Ingredients

Scale
  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • ½ cup all-purpose flour
  • 4 large eggs
  • 2 cups whole milk
  • ½ cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C) and grease a standard muffin tin or use silicone liners.
  2. In a large bowl, whisk together melted butter, sugar, eggs, milk, lemon juice, zest, and vanilla until smooth.
  3. Sift in flour and salt. Stir just until combined — do not overmix.
  4. Pour batter evenly into muffin cups, filling each about ¾ full.
  5. Bake for 22–25 minutes until tops are golden and a toothpick inserted comes out clean.
  6. Cool in the tin for 10 minutes before removing.
  7. Once cooled, dust with powdered sugar and enjoy!
