Description

A flavorful dish of spiced ground beef served over rice with a creamy yogurt tahini sauce and fresh vegetables.


Ingredients

  • 2 tablespoons olive oil
  • 1 small onion (finely chopped)
  • 3 cloves garlic (minced)
  • 1 pound ground beef
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1 teaspoon paprika
  • 1 teaspoon sumac
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 cup water
  • 1/2 cup plain yogurt
  • 1 tablespoon tahini
  • 1 lemon (juice of)
  • 1 teaspoon kosher salt (to taste)
  • 1/2 teaspoon black pepper
  • 1 serving cooked rice
  • 1 serving chopped cucumber, tomatoes, and peppers

Instructions

  1. Heat the olive oil in a large pan over medium-high heat.
  2. Add the chopped onion and saute until softened, about 3 to 4 minutes.
  3. Stir in the minced garlic and cook for 30 seconds until fragrant.
  4. Add the ground beef and cook, breaking it up with a spoon, until browned.
  5. Add the cumin, coriander, turmeric, paprika, sumac, salt, and pepper. Stir well and cook for 5 minutes.
  6. Pour in the water, reduce the heat to low, cover and simmer until the mixture is slightly saucy, about 5 to 7 minutes.
  7. In a small bowl, whisk together the yogurt, tahini, lemon juice, salt, and pepper until smooth.
  8. Divide the rice among bowls. Top with the spiced ground beef and chopped vegetables.
  9. Drizzle with the yogurt tahini sauce and serve immediately.
