Description

A delicious sweet potato dish topped with marshmallows and pecans.


Ingredients

  • 2 large sweet potatoes
  • 2 tablespoons butter, melted
  • 2 tablespoons pure maple syrup
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 12 large marshmallows
  • 12 pecan halves

Instructions

  1. Preheat your oven to 400°F (200°C). Peel and slice sweet potatoes into 1/2-inch thick rounds.
  2. Arrange slices in a single layer on a parchment-lined baking sheet.
  3. In a small bowl, whisk together melted butter, maple syrup, cinnamon, and salt.
  4. Brush mixture on both sides of each sweet potato slice.
  5. Roast slices for 20–25 minutes, flipping halfway through, until tender and slightly caramelized.
  6. Remove from oven, top each round with one marshmallow, and return to oven for 2–3 minutes until marshmallows are puffed and golden.
  7. Immediately press one pecan half into each marshmallow.
  8. Let cool slightly before serving so toppings can set.
