A delicious sweet potato dish topped with marshmallows and pecans.
Ingredients

- 2 large sweet potatoes
- 2 tablespoons butter, melted
- 2 tablespoons pure maple syrup
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 12 large marshmallows
- 12 pecan halves
Instructions
- Preheat your oven to 400°F (200°C). Peel and slice sweet potatoes into 1/2-inch thick rounds.
- Arrange slices in a single layer on a parchment-lined baking sheet.
- In a small bowl, whisk together melted butter, maple syrup, cinnamon, and salt.
- Brush mixture on both sides of each sweet potato slice.
- Roast slices for 20–25 minutes, flipping halfway through, until tender and slightly caramelized.
- Remove from oven, top each round with one marshmallow, and return to oven for 2–3 minutes until marshmallows are puffed and golden.
- Immediately press one pecan half into each marshmallow.
- Let cool slightly before serving so toppings can set.

- This dish can be served as a side or dessert.
- Adjust the sweetness by varying the amount of maple syrup.
