Description
Delicious and healthy cottage cheese bites rolled with almond flour and blueberries, perfect for a quick snack.
Ingredients

- 1/2 cup cottage cheese
- 3/4 cup almond flour (plus more if needed)
- 1–2 tbsp honey or maple syrup
- 1 tsp lemon zest
- 1 tbsp lemon juice
- 1/2 tsp vanilla extract
- 1/3 cup fresh or dried blueberries
- Optional: 1–2 tbsp protein powder
- 1 tsp chia seeds
- shredded coconut for rolling
Instructions
- In a food processor or blender, blend cottage cheese, honey (or maple syrup), lemon zest, lemon juice, and vanilla until smooth and creamy.
- Transfer the mixture to a bowl and stir in almond flour and blueberries. If the dough is too soft, add more almond flour a little at a time until it’s firm enough to roll.
- Chill the mixture for 15–20 minutes in the fridge to firm up.
- Once chilled, scoop and roll into bite-sized balls (about 12–14).
- Store the bites in an airtight container in the fridge for up to 5 days or freeze for longer storage.
Notes
- For added sweetness, feel free to adjust the amount of honey or maple syrup.
- These bites can be customized by adding different mix-ins like nuts or seeds.
