- 4 boneless, skinless chicken breasts (about 1 lb)
- 3 cloves fresh garlic, minced
- 1-inch piece fresh ginger, minced
- 1 cup pineapple chunks (fresh or canned)
- 1/4 cup low-sodium soy sauce
- 2 tablespoons honey
- 2 teaspoons cornstarch
- 2 tablespoons vegetable oil
Instructions
- Prepare your ingredients: mince garlic and ginger, and cut chicken into bite-sized pieces.
- In a bowl, mix soy sauce, honey, cornstarch, and a splash of water until smooth.
- Heat oil in a pan over medium heat. Cook chicken until golden brown, about 5-7 minutes.
- Add garlic and ginger; stir until fragrant (about 1 minute).
- Stir in pineapple chunks and sauce mixture; cook until thickened (3-5 minutes).
- Serve over rice or noodles; garnish with green onions if desired.
