Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 1 cup unsalted roasted cashews
  • 1 cup bell peppers (mixed colors), sliced
  • 4 green onions, sliced
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp chili paste (adjust to taste)
  • 2 tbsp honey or brown sugar
  • 1 tbsp sesame oil

Instructions

  1. Prepare your ingredients by chopping chicken and vegetables into bite-sized pieces.
  2. Marinate the chicken in soy sauce and chili paste for at least 20 minutes.
  3. Heat oil in a large skillet over medium heat and sauté garlic until fragrant.
  4. Add marinated chicken to the skillet and cook until no longer pink (about 6-8 minutes).
  5. Stir in bell peppers and cashews during the last few minutes of cooking.
  6. Mix honey or brown sugar with chili paste and sesame oil; pour over chicken just before serving.

Notes

  • For a milder version, reduce the amount of chili paste.
