A flavorful and spicy cashew chicken dish that is quick to prepare and perfect for a weeknight dinner.

- 1 pound boneless, skinless chicken breasts
- 3 cloves fresh garlic, minced
- 1 cup unsalted roasted cashews
- 1 cup bell peppers (mixed colors), sliced
- 4 green onions, sliced
- 1/4 cup low-sodium soy sauce
- 2 tbsp chili paste (adjust to taste)
- 2 tbsp honey or brown sugar
- 1 tbsp sesame oil
Instructions
- Prepare your ingredients by chopping chicken and vegetables into bite-sized pieces.
- Marinate the chicken in soy sauce and chili paste for at least 20 minutes.
- Heat oil in a large skillet over medium heat and sauté garlic until fragrant.
- Add marinated chicken to the skillet and cook until no longer pink (about 6-8 minutes).
- Stir in bell peppers and cashews during the last few minutes of cooking.
- Mix honey or brown sugar with chili paste and sesame oil; pour over chicken just before serving.
Notes
- For a milder version, reduce the amount of chili paste.
- Serve over steamed rice or noodles for a complete meal.
