Ingredients

  • 2 lbs starchy potatoes (e.g., Russets), sliced
  • 1 lb lean ground beef
  • 1 packet taco seasoning (about 1 oz)
  • 1 cup sour cream
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • 1 cup bell peppers, diced
  • 1/4 cup green onions, chopped

Instructions

  1. Preheat oven to 375°F (190°C). Spray a large baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, brown the ground beef until no longer pink; drain excess fat.
  3. Stir in taco seasoning with 1/2 cup water and simmer for about 5 minutes.
  4. Layer half of the sliced potatoes in the baking dish, followed by half of the beef mixture. Repeat layers.
  5. Spread sour cream on top and sprinkle with shredded cheese.
  6. Cover with foil and bake for 30 minutes. Remove foil and bake an additional 15-20 minutes until bubbly and golden brown.
