A delicious side dish featuring roasted carrots drizzled with a sweet and tangy balsamic glaze.
Ingredients

- 2 pounds carrots (washed and/or peeled, cut into one-inch pieces)
- 1 Tbsp olive oil
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 Tbsp honey
- 1/4 cup balsamic vinegar
- 1 Tbsp butter
Instructions
- Preheat the oven to 400ºF. Place the carrots on a parchment-lined baking sheet, drizzle with olive oil, salt, and pepper. Toss to coat.
- Roast in the oven for 30 minutes, stirring halfway through.
- Combine honey and balsamic vinegar in a small sauce pot, simmering over medium-low heat for about 10 minutes until it thickens. Remove from heat, melt in butter.
- Drizzle glaze over roasted carrots and toss to coat. Serve warm.

- For extra flavor, consider adding herbs such as thyme or rosemary.
