Description

A delicious side dish featuring roasted carrots drizzled with a sweet and tangy balsamic glaze.


Ingredients

  • 2 pounds carrots (washed and/or peeled, cut into one-inch pieces)
  • 1 Tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 Tbsp honey
  • 1/4 cup balsamic vinegar
  • 1 Tbsp butter

Instructions

  1. Preheat the oven to 400ºF. Place the carrots on a parchment-lined baking sheet, drizzle with olive oil, salt, and pepper. Toss to coat.
  2. Roast in the oven for 30 minutes, stirring halfway through.
  3. Combine honey and balsamic vinegar in a small sauce pot, simmering over medium-low heat for about 10 minutes until it thickens. Remove from heat, melt in butter.
  4. Drizzle glaze over roasted carrots and toss to coat. Serve warm.
