Description

Delicious mini pizzas made on English muffins, perfect for a quick snack or party appetizer.


Ingredients

  • 4 English muffins (split in half)
  • 1½ tablespoons butter
  • ¾ cup pizza sauce
  • 1 cup shredded mozzarella cheese (or other cheese)
  • ½ cup mini pepperoni

Instructions

  1. Preheat the oven to 400 degrees.
  2. On a baking sheet lined with parchment paper, lay out English muffins, split into halves with the center facing up. Butter each piece.
  3. Bake the buttered English muffins (with no sauce or toppings) for about 3-4 minutes or until they begin to turn golden.
  4. Remove the muffins from the oven. Add a tablespoon of sauce to each muffin, then add cheese and toppings.
  5. Bake for 10 minutes or until cheese has melted and the edges are golden brown.
  6. Remove from the oven and garnish with fresh herbs before serving.
