- 1 ½ cups crushed shortbread cookies
- 3 tablespoons brown sugar
- ¼ teaspoon ground cinnamon
- 6 tablespoons unsalted butter, melted
- 2 cups eggnog
- ½ cup heavy cream
- ½ cup granulated sugar
- 4 large egg yolks
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- ¼ teaspoon ground nutmeg
- ⅛ teaspoon ground cinnamon
- ½ cup granulated sugar (for caramel shards)
Instructions
- Preheat oven to 350°F. Mix crushed shortbread cookies, brown sugar, cinnamon, and melted butter until combined.
- Press mixture into tart pan. Bake 10 minutes or until lightly golden. Let cool completely.
- In a saucepan, whisk together eggnog, heavy cream, granulated sugar, egg yolks, cornstarch, vanilla, nutmeg, and cinnamon.
- Cook over medium heat, stirring constantly, until thick and pudding-like. Remove from heat.
- Pour warm custard into cooled crust. Smooth top and refrigerate at least 4 hours until set.
- For caramel shards, melt ½ cup sugar over medium heat until deep amber. Pour onto parchment paper and let cool. Break into shards.
- Top tart with caramel shards just before serving.
Notes
- This tart can be made a day in advance for easier serving.
- Ensure to let the tart set in the fridge for at least 4 hours to achieve the best texture.
