Description

This delightful eggnog tart is perfect for the holidays, featuring a creamy filling and crunchy caramel shards.


Ingredients

  • 1 ½ cups crushed shortbread cookies
  • 3 tablespoons brown sugar
  • ¼ teaspoon ground cinnamon
  • 6 tablespoons unsalted butter, melted
  • 2 cups eggnog
  • ½ cup heavy cream
  • ½ cup granulated sugar
  • 4 large egg yolks
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • ¼ teaspoon ground nutmeg
  • ⅛ teaspoon ground cinnamon
  • ½ cup granulated sugar (for caramel shards)

Instructions

  1. Preheat oven to 350°F. Mix crushed shortbread cookies, brown sugar, cinnamon, and melted butter until combined.
  2. Press mixture into tart pan. Bake 10 minutes or until lightly golden. Let cool completely.
  3. In a saucepan, whisk together eggnog, heavy cream, granulated sugar, egg yolks, cornstarch, vanilla, nutmeg, and cinnamon.
  4. Cook over medium heat, stirring constantly, until thick and pudding-like. Remove from heat.
  5. Pour warm custard into cooled crust. Smooth top and refrigerate at least 4 hours until set.
  6. For caramel shards, melt ½ cup sugar over medium heat until deep amber. Pour onto parchment paper and let cool. Break into shards.
  7. Top tart with caramel shards just before serving.

Notes

  • This tart can be made a day in advance for easier serving.
  • Ensure to let the tart set in the fridge for at least 4 hours to achieve the best texture.
