Description
A delicious and healthy quinoa stir-fry packed with vegetables and beans.
Ingredients

- 2 cups quinoa
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 can black beans, drained and rinsed
- 1 teaspoon cumin
- to taste salt and pepper
- for garnish fresh cilantro
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and 4 cups of water. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- In a skillet, heat olive oil over medium heat.
- Add onion and garlic, sauté until soft.
- Add bell pepper and zucchini, cook for 5 minutes.
- Stir in black beans, cumin, salt, and pepper.
- Fluff quinoa with a fork and mix with the vegetable mixture.
- Serve hot, garnished with fresh cilantro.
Notes
- For a spicier version, add some chopped jalapeños.
- This dish can be served warm or cold as a salad.
