This delicious breakfast quiche is made with eggs, cottage cheese, sausage, and veggies, all baked in a flaky pie crust.

- 6 large eggs
- 1/2 cup low-fat cottage cheese
- 1/2 pound ground breakfast sausage
- 1/4 cup diced yellow onion
- 1/4 cup diced red bell pepper
- 1 clove garlic (minced)
- 2 scallions (thinly sliced)
- 1 teaspoon chopped Calabrian chili peppers
- 1/2 tablespoon avocado oil

- 1 deep dish 9 inch pie crust
- 1/2 cup shredded cheddar cheese
Instructions
- Preheat your oven to 400°F (200°C).
- In a blender, combine the eggs, cottage cheese, chopped Calabrian chili peppers, salt, and pepper until smooth.
- Heat a skillet over medium-high heat. Add avocado oil and brown the sausage, breaking it up as it cooks.
- Once the sausage is browned, add onion, bell pepper, and garlic, sautéing until tender.
- Pour the sausage mixture into the pie crust, top with cheddar cheese, and then pour the egg mixture over it.
- Bake for 20-25 minutes.
- Let the quiche sit for 10 minutes before slicing.
Notes
- This quiche is great for breakfast or brunch and can be customized with your favorite vegetables.
