Description

This hearty turkey chili is loaded with beans and fresh vegetables, perfect for a cozy meal.


Ingredients

  • 1 lb lean ground turkey
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 can (14 oz) diced tomatoes with juices
  • 2 cups low-sodium vegetable broth
  • 2 tsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onions and bell peppers; sauté until tender.
  2. Stir in minced garlic, chili powder, and cumin; cook for about 1 minute until fragrant.
  3. Push veggies to the side and add ground turkey; cook until browned and fully cooked.
  4. Mix in diced tomatoes, black beans, kidney beans, and vegetable broth; stir well.
  5. Bring to a gentle simmer; cover and cook for at least 30 minutes to blend flavors.
  6. Taste and adjust seasoning before serving.
