- 1 ¾ cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- 2 cups granulated sugar
- 1 ½ tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 2 large eggs
- 1 cup buttermilk
- ¾ cup vegetable oil (or melted coconut oil)
- 2 tsp vanilla extract
- 1 cup shredded coconut (sweetened or unsweetened)
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Grease two 9-inch round baking pans and line with parchment paper.
- In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- In another bowl, beat together eggs, buttermilk, vegetable oil, and vanilla extract until smooth.
- Pour wet ingredients into dry ingredients and mix gently until just combined.
- Fold in shredded coconut and chocolate chips.
- Divide the batter evenly between prepared pans. Bake for 25-30 minutes until a toothpick inserted comes out clean.
- Cool in pans for about 10 minutes before transferring to wire racks to cool completely.
Notes
- For a richer flavor, use melted coconut oil instead of vegetable oil.
- Check the cake with a toothpick to ensure it’s baked through.
