Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 medium sweet onion, diced
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup long-grain white rice
  • 2 tbsp low-sodium soy sauce
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil for cooking

Instructions

  1. Prep your ingredients by dicing the onion and mincing the garlic.
  2. In a large skillet over medium heat, heat olive oil. Sear chicken breasts until golden brown on both sides (5-7 minutes each side). Remove from skillet.
  3. Add diced onions and minced garlic to the skillet; sauté until translucent (3-4 minutes).
  4. Pour in chicken broth and soy sauce, scraping up bits from the pan. Stir in smoked paprika and thyme; simmer for 5 minutes.
  5. Lower heat and stir in heavy cream; return chicken to skillet. Simmer together for another 5 minutes.
  6. Meanwhile, cook rice according to package instructions. Fluff with a fork when done.
  7. Serve creamy chicken over fluffy rice and enjoy!
