Description

Delicious and nutritious overnight chia oats topped with fresh berries for a perfect breakfast.


Ingredients

Scale
  • 0 cups low fat cottage cheese
  • 1 cup unsweetened almond milk (plus more as needed)
  • 1 teaspoon vanilla extract
  • 12 tablespoons maple syrup
  • 1 cup gluten free old-fashioned oats
  • 1 tablespoon chia seeds
  • 1 cup fresh berries (for topping)
  • 0 cups sliced almonds (for topping)

Instructions

  1. Add the cottage cheese, almond milk, vanilla extract, and maple syrup to a blender. Blend until smooth.
  2. Transfer the cottage cheese mixture to a mixing bowl and then fold in the oats and chia seeds. Stir until well combined.
  3. Separate the oats into two mason jars with lids and let the oats chill overnight.
  4. After the oats have chilled, remove them from the fridge and give them a stir. Top with fresh berries before serving.

Notes

  • Feel free to adjust the sweetness with more or less maple syrup.
  • Can substitute other fruits for topping as desired.
