  • ½ cup quick oats
  • 1 cup mini chocolate chips
  • 1 ¼ cups crushed Cadbury mini eggs, divided

Instructions

  1. Prep the Oven: Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Cream Butter and Sugars: Beat butter, brown sugar, and granulated sugar until light and creamy.
  3. Add Wet Ingredients: Mix in the egg and vanilla until smooth.
  4. Add Dry Ingredients: Add flour gradually, then mix in baking soda, salt, and oats until just combined.
  5. Fold in Chocolate and Eggs: Gently fold in chocolate chips and most of the crushed Cadbury eggs.
  6. Scoop the Dough: Scoop dough using a 3-tablespoon scoop, spacing cookies 3 inches apart.
  7. Bake: Bake for 8–9 minutes until edges are lightly golden.
  8. Finish and Cool: Top with remaining Cadbury eggs and cool for 10 minutes before serving.
