Description

  • 1 cup Diced Tomatoes (Drained)
  • 2 tablespoons Lime Juice
  • 1/4 cup Fresh Cilantro (Chopped)
  • 2 cups Steamed Rice (For serving)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat until it shimmers.
  2. Sauté the chopped onion until translucent and soft, about 3-4 minutes.
  3. Add minced garlic, ground cumin, paprika, and cayenne pepper, cooking for 1 minute.
  4. Add the chicken breast cubes and brown on all sides for 5-7 minutes.
  5. Season the chicken with salt and pepper while cooking.
  6. Pour in the coconut milk and bring it to a gentle simmer.
  7. Mix in the diced tomatoes and lime juice, stirring well.
  8. Lower the heat and let everything simmer gently for 15-20 minutes.
  9. Stir in chopped cilantro before serving, adjusting seasoning to taste.
  10. Serve hot over steamed rice, garnishing with extra cilantro.
