A delicious side dish of roasted Yukon Gold potatoes, flavored with lemon and garlic.

- 2 pounds Yukon Gold potatoes
- 2 lemons, juiced and zested
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Peel (optional) and cut the potatoes into thick wedges.
- Soak them in cold water for 30 minutes to help remove starch.
- Preheat oven to 425°F (220°C).
- In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper.
- Drain and pat the potatoes dry thoroughly.
- Toss them in the lemon marinade until fully coated.
- Spread the wedges on a baking sheet in a single layer.
- Roast for 40–45 minutes, flipping halfway through.
- Broil for the last 2–3 minutes for extra crispiness, if desired.
- Garnish with parsley and serve hot.
