Description

A delicious side dish of roasted Yukon Gold potatoes, flavored with lemon and garlic.


Ingredients

  • 2 pounds Yukon Gold potatoes
  • 2 lemons, juiced and zested
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Peel (optional) and cut the potatoes into thick wedges.
  2. Soak them in cold water for 30 minutes to help remove starch.
  3. Preheat oven to 425°F (220°C).
  4. In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper.
  5. Drain and pat the potatoes dry thoroughly.
  6. Toss them in the lemon marinade until fully coated.
  7. Spread the wedges on a baking sheet in a single layer.
  8. Roast for 40–45 minutes, flipping halfway through.
  9. Broil for the last 2–3 minutes for extra crispiness, if desired.
  10. Garnish with parsley and serve hot.
