Description

Traditional German spiced cookies perfect for the holiday season.


Ingredients

  • 1 cup Water
  • 1 cup Sugar
  • 1/2 cup Honey
  • 1/2 cup Mixed Candied Citrus Peel
  • 1/2 cup Toasted Ground Hazelnuts
  • 3 cups Flour
  • 1/4 cup Unsweetened Cocoa Powder
  • 1 tablespoon Lemon Zest
  • 2 teaspoons German Lebkuchen Spice Mix
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Fine Sea Salt
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1/2 cup Milk
  • 1 large Egg
  • 1 cup Icing Sugar
  • 2 tablespoons Unsweetened Cocoa Powder
  • 2 tablespoons Lemon Juice

Instructions

  1. In a saucepan over medium heat, combine water, sugar, and honey. Stir until melted, then cool slightly.
  2. In your stand mixer, combine flour, mixed candied peel, ground hazelnuts, cocoa powder, lemon zest, German Lebkuchen spice mix, cinnamon, baking soda, baking powder, and sea salt. Mix well.
  3. Pour the warm honey mixture into the dry ingredients, add milk and egg, then mix until a stiff dough forms.
  4. Wrap the dough tightly in plastic wrap and refrigerate overnight or up to 4 days.
  5. Preheat your oven to 350°F (180°C) and line baking sheets with parchment paper.
  6. Divide the chilled dough into 8 equal portions. Roll each into a long rope and slightly flatten.
  7. Bake for 12-14 minutes until puffed but still soft. Cool on baking sheets for a few minutes, then transfer to a wire rack.
  8. In a bowl, mix icing sugar, unsweetened cocoa powder, and lemon juice. Add water as needed for glaze consistency.
  9. Brush the warm cookie logs with the glaze, let cool completely, then cut into diagonal pieces.

Notes

  • Substitute mixed candied citrus peel with ginger for a spicier flavor.
  • Can use gluten-free flour blend for a gluten-free option.
