Ingredients

- 1 cup Water
- 1 cup Sugar
- 1/2 cup Honey
- 1/2 cup Mixed Candied Citrus Peel
- 1/2 cup Toasted Ground Hazelnuts
- 3 cups Flour
- 1/4 cup Unsweetened Cocoa Powder
- 1 tablespoon Lemon Zest
- 2 teaspoons German Lebkuchen Spice Mix
- 1 teaspoon Cinnamon
- 1/2 teaspoon Fine Sea Salt
- 1 teaspoon Baking Soda
- 1 teaspoon Baking Powder
- 1/2 cup Milk
- 1 large Egg
- 1 cup Icing Sugar
- 2 tablespoons Unsweetened Cocoa Powder
- 2 tablespoons Lemon Juice
Instructions
- In a saucepan over medium heat, combine water, sugar, and honey. Stir until melted, then cool slightly.
- In your stand mixer, combine flour, mixed candied peel, ground hazelnuts, cocoa powder, lemon zest, German Lebkuchen spice mix, cinnamon, baking soda, baking powder, and sea salt. Mix well.
- Pour the warm honey mixture into the dry ingredients, add milk and egg, then mix until a stiff dough forms.
- Wrap the dough tightly in plastic wrap and refrigerate overnight or up to 4 days.
- Preheat your oven to 350°F (180°C) and line baking sheets with parchment paper.
- Divide the chilled dough into 8 equal portions. Roll each into a long rope and slightly flatten.
- Bake for 12-14 minutes until puffed but still soft. Cool on baking sheets for a few minutes, then transfer to a wire rack.
- In a bowl, mix icing sugar, unsweetened cocoa powder, and lemon juice. Add water as needed for glaze consistency.
- Brush the warm cookie logs with the glaze, let cool completely, then cut into diagonal pieces.
Notes
- Substitute mixed candied citrus peel with ginger for a spicier flavor.
- Can use gluten-free flour blend for a gluten-free option.
