Delicious lemon poppy seed cookies, perfect for a refreshing dessert.
Ingredients

- 1 1/3 cup granulated sugar (plus extra for coating)
- 2 tablespoons lemon zest (fresh)
- 1 cup unsalted butter (softened)
- 2 tablespoons lemon juice (freshly squeezed)
- 1 large egg
- 1 large egg yolk
- 2 teaspoons pure vanilla extract
- 2 1/2 cups all-purpose flour (spooned and leveled)
- 1 teaspoon baking soda
- 1/2 teaspoon flaky sea salt
- 1 tablespoon poppy seeds
Instructions
- In a small bowl, rub the lemon zest into the sugar until fragrant.
- Beat the butter and lemon-sugar mixture on medium speed until pale and fluffy (about 5 minutes).
- Add lemon juice, egg, egg yolk, and vanilla extract; beat until light.
- Whisk together flour, baking soda, and salt; add to wet ingredients. Fold in poppy seeds.
- Chill dough for at least 1 hour. Preheat oven to 350°F (175°C).
- Scoop dough into balls, roll in lemon sugar, and bake for 12–14 minutes.
Notes
- Allow the cookies to cool for a few minutes before transferring them to a wire rack.
- Store in an airtight container for up to a week.
