Description

Delicious lemon poppy seed cookies, perfect for a refreshing dessert.


Ingredients

  • 1 1/3 cup granulated sugar (plus extra for coating)
  • 2 tablespoons lemon zest (fresh)
  • 1 cup unsalted butter (softened)
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons pure vanilla extract
  • 2 1/2 cups all-purpose flour (spooned and leveled)
  • 1 teaspoon baking soda
  • 1/2 teaspoon flaky sea salt
  • 1 tablespoon poppy seeds

Instructions

  1. In a small bowl, rub the lemon zest into the sugar until fragrant.
  2. Beat the butter and lemon-sugar mixture on medium speed until pale and fluffy (about 5 minutes).
  3. Add lemon juice, egg, egg yolk, and vanilla extract; beat until light.
  4. Whisk together flour, baking soda, and salt; add to wet ingredients. Fold in poppy seeds.
  5. Chill dough for at least 1 hour. Preheat oven to 350°F (175°C).
  6. Scoop dough into balls, roll in lemon sugar, and bake for 12–14 minutes.
