Ingredients

  • 3 cloves fresh garlic, minced
  • 1 cup sun-dried tomatoes, chopped (preferably oil-packed)
  • 1 cup heavy cream
  • 1/2 cup fresh basil, chopped
  • 1 cup low-sodium chicken broth
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts generously with salt and pepper.
  3. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about 1 minute).
  4. Add chopped sun-dried tomatoes to the garlic oil and cook for another 2 minutes.
  5. Pour in chicken broth and heavy cream while stirring; then add grated Parmesan cheese. Bring the mixture to a gentle simmer.
  6. Place seasoned chicken in the prepared baking dish and pour the creamy sauce over them.
