A delicious and hearty breakfast casserole made with tater tots, sausage, and cheese.

- 32 oz frozen tater tots
- 1 lb breakfast sausage (mild or spicy)
- 6 large eggs
- 2 cups shredded sharp cheddar cheese
- 1 cup whole milk
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup chopped green onions
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- In a skillet over medium heat, cook the sausage until browned (about 5-7 minutes). Drain excess grease.
- In a bowl, whisk together eggs, milk, salt, and pepper until slightly frothy.
- Layer half of the tater tots in the baking dish, followed by half of the cooked sausage and half of the cheddar cheese.
- Pour the egg mixture evenly over the layers.
- Top with remaining tater tots, sausage, and cheese.
- Bake for 30-35 minutes or until golden brown on top and set in the middle.
Notes
- This casserole can be prepared the night before and stored in the refrigerator before baking.
