Ingredients

- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup granulated sugar
- 1/2 cup brown sugar (light or dark)
- 1/2 cup creamy or chunky peanut butter
- 1 large egg (room temperature)
- 1 tsp vanilla extract
- Powdered sugar for rolling
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, cream together granulated sugar, brown sugar, and peanut butter until smooth.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Scoop tablespoon-sized portions of dough, roll into balls, then coat in powdered sugar.
- Place on prepared baking sheets about 2 inches apart and bake for 10-12 minutes until soft in the center.
- Let cool on the pan for a few minutes before transferring to wire racks.
Notes
- For a variation, add chocolate chips or chopped nuts.
- Store cookies in an airtight container for up to a week.
