Description
A delicious creamy garlic chicken served over spaghetti, perfect for a weeknight dinner.
Ingredients

- 3 boneless, skinless chicken breasts (about 1 lbs)
- 3 cloves garlic, minced
- 1/4 cup freshly squeezed lemon juice
- 8 oz spaghetti (or pasta of choice)
- 1/2 cup heavy cream
- 1/2 cup freshly grated parmesan cheese
- 2 tbsp extra virgin olive oil
- 2 tbsp capers, rinsed and drained
- 2 tbsp fresh parsley, chopped
Instructions
- Prepare the Pasta: Bring a large pot of salted water to boil. Add spaghetti and cook according to package instructions until al dente. Drain and set aside.
- Sauté the Chicken: In a large skillet over medium heat, heat olive oil until shimmering. Season chicken breasts with salt and pepper and sauté for about 6-7 minutes on each side until golden brown and cooked through. Remove from skillet.
- Flavor the Sauce: In the same skillet, add minced garlic and capers; sauté for about one minute until fragrant. Pour in lemon juice and heavy cream while scraping up any browned bits from the skillet. Simmer for 3-5 minutes until slightly thickened.
- Combine: Return cooked pasta to the skillet along with grated parmesan cheese. Toss everything together until combined, adding more cream if desired.
- Serve: Sprinkle chopped parsley on top before serving hot with additional parmesan if desired.
Notes
- Make sure to use freshly grated parmesan for the best flavor.
- This dish can be customized by adding vegetables such as spinach or sun-dried tomatoes.
