Ingredients

  • 1/2 cup granulated sugar
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 cup apple cider (pure)
  • 1/2 cup unsalted butter (softened)
  • 1 large egg (room temperature)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, cream softened butter with brown sugar and granulated sugar until fluffy (about 3-5 minutes).
  4. Beat in the egg and vanilla extract until smooth.
  5. Gradually mix in apple cider until just combined.
  6. Fold dry ingredients into the wet mixture until no dry streaks remain.
  7. Drop rounded tablespoons of dough onto ungreased baking sheets, spacing them about two inches apart.
  8. Bake for 10-12 minutes or until edges are golden brown; let cool for 5 minutes before transferring to wire racks.
