A delightful recipe for making French macarons filled with rich chocolate ganache.
Ingredients

- 1 cup almond flour
- 1 cup powdered sugar
- 3 large egg whites at room temperature
- 1/2 cup granulated sugar
- 1/2 tsp pink food coloring (gel)
- 4 tbsp unsalted butter, room temperature
- 6 oz bittersweet chocolate, finely chopped
- 1/2 cup heavy cream
Instructions
- Preheat the oven to 300°F (150°C). Line two baking sheets with parchment paper.
- In a bowl, sift almond flour and powdered sugar together until fine.
- In another bowl, beat egg whites until soft peaks form, then gradually add granulated sugar and whip until glossy.
- Gently fold in pink food coloring and the sifted dry ingredients until just combined—avoid overmixing.
- Pipe small circles onto the prepared baking sheets; tap gently to release air bubbles.
- Bake for 15-18 minutes until firm.
- For the ganache, heat cream until steaming; pour over chopped chocolate and let sit for 5 minutes before stirring smooth.
- Pair similar-sized macaron shells and pipe chocolate ganache between them.
Notes
- Ensure that the egg whites are at room temperature for better volume.
- Customize the color of the macarons using different gel food colors.
